If you have five ripe bananas and don’t know what to do with them, Banana Fritters are the way to go. With a prep time of just 5 to 10 minutes and cooking it just like making pancakes, these banana fritters go down quick! My wife improvised with the recipe by adding coconut sugar to the batter and also cooking it with coconut butter. Breakfast never smelled this good!
Banana Fritters
Here are the ingredients that go into these fritters. The bananas are ripe enough to act as the binder and you don’t need egg replacer to hold the pancakes together.
- 5 ripe bananas
- 1-2 tbsp coconut sugar
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp vanilla extract
- 1 cup unbleached wheat flour
- Salt to taste
- Optionally add 1 tbsp of Chia seeds
I think next time around, I’m going to add a tbsp of Chia seeds into these. Can’t go wrong with Chia. Mash up all the ingredients in a large mixing bowl. From this point on, it’s just like making pancakes. In a large pancake griddle oiled with coconut butter, spoon the batter in and cook on high until golden brown on both sides. Serve warm. My kids love maple syrup, but the banana fritters are sweet enough without the syrup.
