This corn bread recipe is so simple that you can whip this up in a jiffy. Using wholesome vegan ingredients, the corn bread takes just 5 to 10 minutes of prep time and the oven at 400°F does the rest. In 30 minutes you can have the most delicious vegan corn bread and look like an ace chef! That said, lack of eggs, butter and milk does make this corn bread a little less fluffier than the non-vegan version.
Corn Bread Recipe
This corn bread recipe has just a few simple wholesome ingredients:
- 1½ cups Masa Harina
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 cup Organic Eden Soy milk with Vanilla
- ⅓ cup Earth Balance Natural Butter Spread
- 1 cup Red Mills Egg Replacer
- 1 tbsp Organic Raw Blue Agave (optional)
- 1 tbsp Chia Seeds
The Masa Harina has nixtamalized corn (corn kernels treated with an alkaline lime solution) that adds extra calcium. And the soy milk with vanilla was an accidental oversight when I bought the milk, but added a unique flavor that my kids loved. Preheat the oven to 400°F and while you are waiting combine the ingredients in a bowl and mix well. Grease an 8-inch square baking pan and pour the ingredients into the pan. Bake for 20 to 25 minutes or until a toothpick inserted in center comes out clean. Serve warm, ideally with a stew or soup of some kind.
