Trader Joe’s makes this stir fry tofu dish so easy that I feel silly calling this a recipe since it only takes four ingredients, 2 minutes of prep time, 10 minutes of waiting around and another 5 minutes of cooking. Nevertheless, my kids love it and it’s a family favorite.
Stir Fry Tofu
Here’s what you need in terms of ingredients.
- Organic Sprouted Tofu – Extra Firm
- 1 large leek, trimmed and chopped into ½ inch pieces
- 2 to 3 tbsp Soyaki Sauce
- 1 tbsp of Olive Oil
Cut the tofu into ½ inch cubes and marinate it with the Soyaki Sauce for about 10 minutes. While the tofu is marinating, trim and rinse the leeks thoroughly, chopping them into 1/4 inch pieces. When the leeks have been chopped, mix the tofu pieces so that they marinate evenly. On a large wok, cook the leeks in olive oil for about 2 to 3 minutes, in medium heat, stirring frequently. Lower the heat, add in the tofu with the marinade and cook for another 2 to 3 minutes.
The sprouted tofu, made from sprouted soybeans has enhanced nutrition and is easier to digest. If you are a runner, you’d love this. 1 cup of leek (~90g) has 160mg of Potassium which your body will appreciate before or after a long run. Serve this Stir Fry Tofu dish with the sauce over a bed of Organic Brown Rice. Yum.
