My fifth and possibly final blog on Sushi Recipes, making sushi rolls is a finale of sorts after making dashi stock, sushi rice and Tamagoyaki. Sushi rolls also called as Makizushi is a cylindrical piece, formed with the help of a bamboo sushi rolling mat. Wrapped with Nori seaweed sheets, you can make sushi rolls with the Nori either on the outside or the inside. What you put inside the sushi rolls is really up to your imagination and creativity. I’ve used picked radish, cucumbers, Tamagoyaki (not vegan), avocado, miso with ginger, shiitake mushrooms and pickled carrots. For the inside out sushi roll, you can also coat the sushi rice outside with roasted sesame seeds or peppered bonito flakes (not vegan).
Vegan Sushi Rolls
The best tip that I got from the Sushi Cookbook was the rice vinegar and water mixture that’s used to both dip your fingers while working with the sushi rice as well as dipping the cutting knife so the rice doesn’t stick. Add 2 tbsps of rice vinegar to every 2 cups of water and float a slice of lemon on top.
Use a Nori sheet and place it onto the bamboo mat. Top the seaweed paper with a layer of sushi rice moving quickly and remembering to wet your fingers in the water/vinegar mixture often. Add in your favorite fillings and start rolling the mat from the edge nearest to you. Use your fingers to hold the fillings and gently compress the sushi roll, but not so hard that the fillings ooze out from the side. Just before the bamboo mat becomes part of the sushi roll, pull the end of the mat out. Complete rolling and carefully pull back the mat to reveal the sushi. Dip the knife in the water/vinegar mixture and tilt it up so the liquid runs along the edge of the knife. Place the roll on a cutting surface and cut into slices, while being careful to not rip the seaweed sheet. If you don’t have a sharp enough knife, use a cheese knife instead. Works like a charm.
