Quick and Easy Fish Stew Recipe

I made Corn Bread with Chia Seeds the other day and was looking for something quick with gravy to go with the corn bread. My wife suggested a fish stew recipe and this is what we came up with. Super easy to make, not a lot of prep time and very flavorful. I’m sure I’ve mentioned this before, but I love chopping fresh parsley for any stew or soup. This fish stew recipe works well with flaky white fish like Tilapia, Sole or Cod.

Fish Stew Recipe

This fish stew recipe is incredibly easy to make and has a fairly small list of simple ingredients.

  • 1 cup chopped onions
  • 2 large garlic cloves, chopped
  • 2/3 cup fresh parsley, chopped
  • 1 cup fresh tomato, chopped
  • 2 cubes of vegetarian bouillon or 8oz of vegetable broth
  • 2/3 cup dry white wine
  • 1 lb of fresh white fish, cut into 2-inch pieces
  • A little oregano, thyme and pepper

Add 1 or 2 tbps of olive oil to a large soup pot and cook the onions and garlic over medium heat. Sauté for a few minutes and add the parsley and stir for a couple of minutes. Then add the tomato and cook for a few more minutes. Now add the broth, the white wine and then the fish pieces. The fish usually cooks really quick (within 5 minutes or so) so make sure you don’t overcook it. Add the seasoning (Tabasco always helps!) and salt to taste. Ladle out the soup into bowls and serve warm (with the corn bread). Yum.
