Lately I’ve been on a roll making some sort of nutty or legume spread during the weekend that lasts the whole week (and then some). Whether it was the Cashew Cheese Spread or the Vegan Pesto, these spreads definitely beat buying them at the store with preservatives. They are great on sandwiches (Dave’s Killer Bread is the best) delivering sumptuous amounts of high quality plant protein to your body. This cilantro hummus recipe is no different. All you need are some basic ingredients and a food processor/blender (Vitamix rocks!) and about 10 minutes of simple prep work. After you make the first couple of spreads, the subsequent ones only get easier.
Cilantro Hummus
I added way more cilantro to this recipe to the point it was sort of hard to tell that it it was hummus. Though, even my kids that aren’t huge fan of hummus ended up liking it. Serendipity turns out is a good thing. Here’s what you need:
- 1 15oz can of Eden’s Organic Garbanzo Beans (no salt added)
- 1-2 cups of fresh Cilantro, chopped
- 2 tbsp of Organic Sesame Tahini
- 2 garlic cloves
- Juice from ½ lemon
- ½ of the water from the can
- 1tsp Ground Cayenne Pepper
- Salt and Pepper to taste
Add all the ingredients to the food processor and blend until you get a creamy mix of Cilantro Hummus. Stop every now and then and scrape the sides with a spatula so that the ingredients are evenly mixed. Serve on toasted slices of Trader Joe’s Herb Slab.
